pic-150x150When I am having a bad day, I try to relieve it by going in my kitchen and cooking. My friends and my family will vouch for it. My kitchen is my safe haven and my cooking is my meditation.

India is known for its diversity in cuisines. It changes dramatically as you go from state to state. I would not dare to say that I can even cook most of the different dishes, but I am always willing to learn.

Since I am a vegetarian, trying to find new dishes is a challenge.  Recently I found a great book called Vegan Indian Cooking by Anupy Singla.  Most of the dishes were familiar, but they now were a healthier version. She prepares the dishes using less oil and saturated fat than traditional recipes. The first part of the book is the glossary of all the main spices used in Indian cooking, so it is less daunting for a new cook. She also shows how to use, prepare and store Indian spices.

As she says in her introduction, “Eat what you want but make sure what you eat is real, whole food. And open your mind to all of the possibilities.” I assure you, you will be not disappointed!
